If you prefer a single, satisfying solution, the pencil-and-paper logic puzzles (Sudoku, Nonogram, Kakuro, Minesweeper) hand you a clean new grid every time and ask you to reason your way out. Most include hints and unlimited undo, so a tricky spot is a challenge to think through rather than a dead end, and the difficulty scales as you get better.
